Have you taken an ohmmeter to the sender? Just to make sure it’s not faulty out of the box and goes to full short after a little bit of heat?

Pull the connector off the sender and earth it on the engine - that should show full scale. As above check the sender from connector to its body to see if its shorted.

We already know that the wiring is fine (gauge going to hot). I would test the actual sender.

Best option would be to remove the sender, attach wires to spade connector and nut that you tighten it down with. Connect probes from ohmmeter to read resistance. Place in pan of water and using a thermometer heat until you reach around 82°c. The ohmmeter should read more than 0 and less than full short.

You’re sure the engine itself isn’t over heating due to a stick thermostat right? Have you used an IR thermometer to check?
