Oil pressure Guage

Does anyone have any info or experience in how to plumb in an oil pressure gauge into the oil supply onn a '65 2000sc? As in what is what thread is in the T adapter you need?

Not me. Suggest you pull the oil pressure switch(idiot light sender) and either measure its thread (you do have a thread gauge?),or take it to a place that sells such gauges. FWIW, I can tell you that Mazda MX5 oil gallery fittings and their warning light sender are all 1/8 BSPT and there are many fittings available in that thread. unlikely to be an american thread.
 
There is also a gallery plug on the side of the block, or you could also fit a TC oil pipe which is tapped for a sender.
@Dave1966 - I have an adaptor to fit this gallery if useful to you. It gives sufficient clearance to fit a standard TC style drum-shaped pressure sensor without having to fit TC external oil pipes.

I'll see if I can find it if useful to you? It's new and never fitted.
