Thanks for the suggestions - I'm in Aus so the ZF conversion place is a bit far for me. Considering the advice from Harvey I'll get a proper transmission place (not the last guy) to fix it, and they should be able to fabricate a linkage. I've made my own Holley linkage which I'm quite proud of and I was going to attach the kickdown to it but hadn't got around to it before the 1st transmission specialist decided to remove the cable completely. I'm assuming he was unaware of it's dual function as I was.
Luckily I've done stuff-all mileage in the car since the linkage was removed, so at least damage will be limited.
